Our house is open.

Finest chocolate. Finest spices. A blend made in heaven.

The atelier is a single room in Ponnani, Kerala. A long table runs the length of it. A single lamp sits over the door. A pot of matcha is usually warming on the side, and the chocolates arrive on cream linen, in their tins, sealed in wax. There is a small ceremony to opening one.

We open the door by appointment. A visit is not a tasting in the showroom sense. It is closer to an evening at someone’s home — quiet, considered, with a few squares from the chapter of your choosing, and a conversation about what the chapter is trying to do.

THE MAKING · FOUR PATIENT MOVEMENTS

  1. The spice is read

    Before any cocoa is touched, the spice is chosen and tasted alone — so we know exactly what it brings before it meets the bean.

  2. The bean is conched

    The chocolate is turned slowly for hours, the way patience is kept — until the grain is gone and only smoothness remains.

  3. The blend is married

    Spice and cocoa are brought together and rested, so neither speaks over the other and the chapter finds its voice.

  4. The tin is sealed

    Each square is set on cream linen, placed in its tin, and closed with wax — the small ceremony waiting at the other end.
